Eating gluten- and dairy-free has taken the health food industry by storm. Food manufacturers are realizing that unless they offer a gluten-free version of their product, it is increasingly difficult to be competitive. Studies show that within a single year, as many as 100 million Americans consume gluten-free products. Non-dairy foods and milk substitutes have become more common: In 2015, the U.S. dairy alternatives market was worth 2.09 billion, and growing.
I invite you to join me in exploring the nature of food sensitivities and the trending gluten-free and dairy-free diets that often accompany such sensitivities. Are these types of elimination diets really necessary?
I wrote this book because, for 30 years, I have been clinically able to help my patients start eating wheat, dairy and other hard-to-digest foods again, simply by rebooting the strength of their digestive system and helping them navigate around the highly processed versions of these foods.
The “grain brain” phenomenon―namely, the notion that gluten negatively affects our brains and our health and should thus be avoided―has now been challenged by a recent scientific discovery that explains the reaction many people have to wheat and dairy. Researchers have found minute lymphatic vessels in the brain and central nervous system (CNS) that drain directly into the body’s main lymphatic system. The discovery is groundbreaking; as previously, science did not know these lymphatic vessels even existed. The science shows that numerous toxins---including beta-amyloid plaques, which are linked to Alzheimer’s disease---are drained from the brain through the brain’s lymphatic channels while we sleep.
This research is so compelling because it suggests that commonly, in the case of “grain brain” and other food intolerance health issues, these brain and CNS lymphatics as well as other lymph channels may be congested, and thus cannot flow or drain toxins out of our systems properly. Let’s follow this to its logical conclusion: Lymphatic congestion can lead to a heightened immune response resulting in inflammation in the body. Inflammation is directly linked to a host of digestive issues, food sensitivities and other health concerns. Therefore, it’s not the “grain,” but the “drains” that may be the real culprit behind this food sensitivity epidemic.
A healthy lymphatic system starts with good upper digestion and a healthy intestinal tract. It is the primary circulatory system that processes both nutrients and toxins from the intestines. When the ability to digest certain proteins breaks down---which is all too common today in our stressful world laden with toxins---proteins like gluten and casein from dairy, ultimately clog the lymphatic system surrounding the intestinal tract. Over time, the lymphatic system, which drains waste from every cell in the body, can become congested, leading to food intolerances that we have blamed on foods like wheat, dairy, and others.
Our direct human ancestors have been eating wheat and other grains for 3.4 million years and early humans have been grinding wheat into flour for 30,000 years, making the path to continue eating wheat in our modern times very clear: Decongest the lymphatic system, reboot digestive strength and shift our food focus away from simple sugars to good, healthy fats, along with foods in their whole, natural state.
Your digestive system is responsible for delivering nutrients as well as escorting dangerous toxins out of your body. If your digestion is weak, simply eliminating wheat or dairy from the diet is an oversimplification of the real problem, and does not begin to address the root cause of the issue.

Finally; a book that asks the right questions

This is the book I've been looking for! Regardless of your view on origins, everyone knows that man has been eating gluten-containing grains for thousands of years AT LEAST. And widespread sensitivities to wheat and gluten are pretty new -- as in, decades, not centuries. So the idea that wheat sensitivities occur because "the human body can't digest wheat" has always struck me as bad science. But no one assuming the problem is the wheat was asking WHY we can't digest it! Thank you, thank you, thank, Dr. Douillard, for asking the right questions -- and finding answers.
Toxic bodies and damaged guts are the primary factors (with several lesser contributors mentioned, as well). I'd suspected this, but Dr. Douillard confirmed, with plenty of research to back up his claims. This is a very well-documented book, with over 600 references! The author walks us through the science of what's really happening (and how we've been misled) in the first section of the book. In the second section, he gets into fixes.
Dr. Douillard is an Ayurvedic practitioner, so there are a lot of Ayurvedic principles here. He supplements the ancient understanding, though, with modern science that backs up what the ancients knew. The instructions are detailed and specific, so anyone can follow them without confusion or fumbling to figure things out. And although some of these are radical LIFESTYLE changes for many people, all are gentle for the body.
I disagree with Dr. Douillard's assessment of wheat and other gluten-containing grains as traditionally a fall-harvested, winter-only food. (And, oddly, wheat is found on the other seasonal food lists, as well.) But I agree, in principle, that it probably comprised a larger PROPORTION of the winter diet than the spring or summer diets, because it keeps well, where fruits and greens do not. Apart from that, I have some minor disagreements, but nothing that would substantially impact any of the key recommendations.
As a nutritionist in training, I appreciate that most of these recommendations are basic healthy lifestyle recommendations. And yet, there's an acknowledgement that many of us have damaged digestion and "clogged" detoxification pathways and these need intentional help to heal. You'll find that here.
The book could have used one more editing pass. It's pretty good overall, but there were a few places where it looked like maybe things were reworded and the sentences didn't quite get fixed, so there are fragments, and a couple places the numbers that are supposed to be superscript hyperlinks to references are actually just regular numbers and unlinked. That's a very minor quibble, though. Overall, the formatting is clean, with profuse hyperlinking to make it easy to move about the book (especially to the numerous references), and there's even a pretty thorough index (also hyperlinked)!
Basically, whether you can eat wheat or not, if you're American, just buy and read the book. It's well worth it.

It really works!

I've also read the 3 season diet and participated in one of Dr. Douillard's guided, 2 week, cleanses. I would highly recommend both, but if you only want to read one, I would choose this one for its detailed information on digestion.
Dr. Douillard writes clearly, providing a lot of scientific resources and support for his claims. What I appreciate most is that in addition to great background information, he provides many clear, step by step suggestions of what to do. This book also provides an excellent overview of how your body processes food.
Immediately after reading this book I did the short, 4 day, unguided version of his cleanse, though without the herbs. Even without the herbs I felt immediate results. I've been through periods of not eating dairy or gluten, and by healing my gut and modifying my overall daily routine according to his suggestions, I am now able to digest both wheat and dairy again.
My experience with Dr. Douillard and LifeSpa has been nothing but positive, and I've recommended this book to both my mother and a friend. If you struggle with digestive issues, energy, etc. I would highly recommend reading this book.

LOVE IT!!! This book is about so much more than incorporating wheat back into your life :o)

Oh my gosh! This book is loaded with so much information - I love it! There is SO MUCH more healthy & helpful information in this book than what the title tells you. I first came across John's teachings while I was a student at the Institute for Integrative Nutrition. I really like the way he teaches and and explains things. For a couple years now I have been working through the process of recovery from adrenal fatigue, one of the many, many, many important things I learned from this book is that Turmeric is high in oxalates - something folks with adrenal, and thyroid issues need to be careful consuming too much of. Very helpful for me to know, since recently I started adding turmeric to just about everything I make, although I don't see any problems cropping up from the turmeric, I know now to be aware in case I do start having problems :o). I also love how both primary and secondary foods are covered (as in Ch.9 Lymph RX, and Stress and Lifestyle Affect your Lymph)! As I was reading and highlighting the pages I realized that I'm highlighting nearly the whole book. Because I much prefer a paper copy to read v.s. using the kindle, I've added my order to the pre-order list and cannot wait for it to be released in January 2017!!! Without a doubt my paper copy will be filled with tab marks and highlighting!!! Thank you John Douillard - LOVE the book!
